2 chicken breasts, preferably organic
Creole seasoning to taste
1 cup flour
2 eggs, beaten
1/2 cup BellaVitano Raspberry Cheese
1/4 cup fresh sage, minced
2 tablespoons olive or corn oil
Season chicken breasts with creole seasoning. In three bowls, add the following: first bowl, flour; second bowl, eggs; third bowl, cheese and sage, mixed well. Preheat oven to 375 degrees. In saucepan, heat oil. Dredge chicken in flour first, then egg, then cheese mixture. Coat well. Cook in saucepan for two minutes, flip and cook an additional two minutes. Remove chicken and place in baking dish. Bake for 20-25 minutes.
